Because they are cheaper, take up less space in storage, are less dusty, and 
are less prone to mold than the shredded stuff.

And they are no more trouble than the shredded kind, as you can also...

Just dump a scoop or two into the feed bin, and pour an equal
?amount of water over it and stir! 

Except with the pellets you don't have to stir.

No soaking needed!!! 

If you like soaking them over time and letting them get mushy, you can, but it 
isn't necessary.?? And it isn't necessary to add water either, you can feed 
them dry as easily as any other kind of pelleted feed (In fact, I have one 
horse who will only eat them dry, if I add water and they get soft, she won't 
eat it...and she turns her nose up at the shredded stuff too).

Shredded (loose) beet pulp in most cases, no longer has molassas added. 

Since some of the things that I add to beet pulp when I feed it are sweet feed 
(corn, oats, barley, molasses) and A&M (alfalfa & molasses), the amount of 
molasses that has to be added by the manufacturer to beet pulp in order to 
pelletize it is absolutely inconsequential...probably is even if you don't add 
sweet feed to it.
