There is no such thing as exclusively aerobic metablism in the real world.
You skew the data when you start with that assumption--making statistics lie.
It is very likely that a very significant portion of energy expenditure
during an endurance ride is anaerobic, thereby carbohydrate use not reflected
in heartrate/oxygen delivery numbers.
