Yes, I've heard this before, but am not sure I really believe it.  Perhaps the reference is to supposedly poorer quality white hooves due to white leg markings.  I've see horses that proved that theory and those that disproved it.

I seem to remember a cowboy proverb I read once, when I was younger. It went something like:
One white foot, keep him.
Two white feet, buy him.
Three white feet, try him.
Four white feet, cut off his hide and feed him to the crows.
 
Any one else ever heard it?
