So count me in the less than 20% who has "gutted, butchered, cut and 
wrapped any animal other except fish."

Me too.  We butchered more than one steer and at least one hog.  We only 
quit  raising our own meat because it yielded way too more than we needed.. 
I am actually quite good at gutting chickens.  I learned the year we raised 
100 fryers.  We also froze gallons of green beans.  By the end of that 
winter, I didn't care if I ever ate green beans, fried chicken or venison 
again in my entire life.
