That is a completely different question. To
make my point: There are millions of folk in the USA who will not eat any
product of the PIG. They are called Jews and Muslims. They persist
in this food custom, even when they do not believe or practice the tenants of
the Religion.
The question of what is or is not suitable food is
a personal decision, and the government should keep its nose out of
it.
I would never attempt to tell you what you can or
can not eat. I will never attempt to tell you that you must send your
personal horse to slaughter.
There are many animals and plants I have never
eaten, and probably never will. Some because of an "ish" factor, some
because they are endangered*, some because the particular animal is a "pet", and
some because I have never had the chance. But I am not going to tell you
that you should not eat them, and I expect that will not attempt to tell me what
I should not eat.

*Yes, the government should not allow endangered species to be killed
whether or not they are eaten. An example is: Alligator hunting for
food was banned until they recovered (I am not up on the exact current status,
not germane to this post), but at the same time farm raised Alligator was
consumed. By the way I have eaten and like
Alligator.
