Your best answer would be to look at other rides that take place on Sunday. You might notice a decrease of ridership in a lot of rides on Sunday, but I strongly suspect that stems from people wanting to use Sunday to drive home from a ride, not necessarily due to an obligation to a church. Getting *to* a Saturday ride on Friday is stressful enough, even though there are less cars on the road that day due to people taking off that day, plus 4-day work weeks. Driving home on Sunday, however, is a breeze. Most of us would deplore driving home on Monday in the rush of commuters. You'd still get the local draw from people who don't have far to travel and can whip home the same day they finish the ride. Also, keep in mind the two big rides in May/June -- Michaux and the OD -- which draw a huge number of riders. They are 2 weeks from one another. Frankly, I could care less about the Derby. I'd rather enjoy an endurance ride on Saturday, drive home on Sunday ... and find out who won at Churchill Downs later.
