Just because the gauge measures pressure points and determines fit at that time doesn't necessarily mean that those pressure points will be the same at a later time. IMHO, the difficult thing about fitting saddles is not necessarily the measuring, but rather how to find a saddle that will be able to adjust to changes in the horse's musculature.
