info on how/when to ride while up there in no-oxygen
land? We'll condition the best we can with the hills
we have, so the actual climbing isn't as much of a
concern as elevation sickness.

Don't worry about the altitude, your horses will probably do just fine.  Horses
accomodate changes in altitude much better than humans.  Many "sea level" horses
came to the Races of Champions that were held at high altitudes, and did very
well.
