Can the position of the knee roll on the FreeForm be changed? Lots of saddles now have the knee rolls attached by velcro so they can be moved. If so, try moving them very far forwards to see if they then clear your knee. You might be among those of us with long thighs. That can make finding a saddle with knee rolls that fits harder since your thigh length and seat size don't match up. You could look for a saddle with a flap that is expanded forwards more than straight down. The ReactorPanel website has excellent pictures of all the saddles they offer; that makes it easy to compare saddle designs.Once you find a tree that fits your horse, it's withers shouldn't be a problem. Specialized Saddles use shims to change the tree width. That might be another saddle to look at if a more western look is ok. I think used saddles are a great way to go because you can get a better saddle for less money than buying new (just like with cars). Do negotiate a trial period and the right to return the saddle if it doesn't work. You might end up paying some UPS charges but, all in all, probably less than buying a new saddle that also might not work.
