The level of fitness you need to achieve will be based on the goal you have. If your goal is to simply enjoy the ride and finish within the allowed time, then you will find it easy to get that level of fitness, without alot of effort. Many completion riders only ride on the weekends, they aren't into "racing", and are able to keep themselves and their horse nicely fit to finish. Ride on the days you can, make the rides count, use paces similar to what you will need to finish the LD. This is not as complicated of sport as you may think, for the average rider. Ride within YOUR level, and keep your goals within that level and you will be fine. Should you want to go further, or faster, then you will want to find ways to do more training. Otherwise, ride, do your thing, come to the LD's and enjoy what that trail has to offer. It is about getting pleasure from what YOU do, not expectations of others, or putting unrealistic expectations on yourself. Follow your heart, and no matter the ride, you will find something good in it.
