Saddlebreds are taller, showier, and used more for english pleasure/park under saddle and driven. Some are gated. Standardbreds are bred to be cart horses. Either pulling an Amish buggy, or trotting on a race track. Standardbreds are nowhere near as refined, or standardized to a phenotype--as someone else mentioned here--as the Saddlebred. Correct me if I'm wrong, but I believe the Saddlebred was developed in the South as a plantation owners horse--tall and narrow to step smartly between the tobacco rows while overseeing their plantations.
Your new horse can be registered NSH (National Show Horse) because of his Arabian/Saddlebred parentage. A NSH is a Arabian/Saddlebred cross breed, which really does not bred true (as in phenotype) when two NSH's are bred together. However, the product of a NSH/NSH mating is still registerable as a NSH. But, if you want a NSH that looks like a NSH, you need to breed a purebred Arabian to a Saddlebred.
