I think CSU's newest freshman class starting next fall will be around 80%. My class started out 73% women. I think the fundamental difference is men no longer have >any contact with animals in their youth. Probably saying the same thing in a different way, but the admissions committee members are saying that vet medicine is essentially a "people business" and that the women applicants are better at talking to people. Better at commiserating with a client over a sick, dying pet, better at communicating in general, better at the warm and fuzzy stuff that contributes to producing a loyal clientele (and hopefully, better animal care).
