Get rid of the jeans and get some nylon riding tights and the chafing
should not be a problem.
As far as trotting and cantering, saddle more designed (than the typical
western saddle) for prolonged trotting and cantering should help. I also
wear lycra support pants under riding tights.

I would reccomend the DeSota saddle for a start. You may be able to find
one used for a reasonable price.
