Well, I am neither a "carbo-opponent" (comments from others notwithstanding) 
nor an opponent of fat--simply trying to keep a perspective between the two.  
But I'd comment here that it is not unusual for my horses to consume 40 
pounds of hay in the 24 hours pre-ride and to continue to eat it at every 
opportunity during the ride.  Same horses also eat some grain, and will eat 
it readily at vet checks right along with their hay.  I consider the ability 
and desire to eat large quantities under any circumstances to be a positive 
selection factor for endurance.

As to fat--I'd start calling it a "high fat" diet when it starts to go over 
about 10%.  And horses will vary as to how well they will thrive on extra 
fat, just as they vary on how well they thrive on other nutritional schemes.
