Motercycles, though that could be covered under ATVs. 
Dogs, definatly.  How about having the rider remove
sweaters and them flying around (like on a windy day)?  I
watched a bad spook last year when a girl took off her glow
in the dark pink jacket at lunch and tied it to her saddle
... going up this hill the wind caught it and it flew off
and so did the horse!  Oh, and how about broken equipment? 
Same ride, different rider, his latigo broke -- the horse
took off.  It would have been much nicer if A) That Cactus
wasn't RIGHT there <grin> and B) The horse had STOPPED.
