I would start to suspect something else is in the bag besides beet pulp.
Try getting some beet pulp from a different source/feed manufacturer and see
if you still get diarrhea.

A number of universities have done studies in which horses were fed (dry,
unsoaked) beet pulp up to 45% of the total ration, probably about 8-10
pounds a day, with no problems whatsoever.

Shredded is fluffier and soaks up water faster. Pellets are more compact,
so a bag (in my area) of pellets is 50#, whereas shredded only weighs 40#.
Nutritionally, they're the same.

It takes 1.4 pounds of beet pulp to replace the energy (calories) in 1 pound
of grain, more or less. But you can feed much more beet pulp safely than
you can grain.
