The Imperial pint is 20 oz (not 16) and the imperial fluid ounce is slightly smaller (but not 25% smaller) than the American one.
 
So yes, a US gallon of water weighs about 8 pounds (but it depends on temperature and air pressure).
 
The Imperial gallon, however, weighs closer to 10 pounds.
