I think the most secure saddle in the world is the Australian but I could not make them fit my horse. Next to that is the SR. I have had 3 of them and love them all.

So, another saddle search question.
Everytime I think I've found the perfect saddle, I read something or question something about it. Currently riding in a Frank Baines English which was fitted to a diff. horse. Luv the saddle but want more security and need narrower saddle tree for my Arab. So I need some help. I'm 5'6, apple shaped, fairly wide hip bones (I'm bow legged!) , ~175 lbs, prefer a saddle w/ security (deep seat) and/or knee/thigh rolls but still ok for posting/standing in stirrups. Comfort, security, deep seat very important. Balanced ride, too. I start to worry about the saddles that look like they have a very wide twist. Moderate/avg twist is what I think I need? also mod twist helps w/ correct leg position. like close contact feel.
My horse is almost 16 hd arab, moderate withers, dip behind shoulders, straight/short back, narrow built (sort of TB but w/ short back). Really want saddle rigging that can be center-fire so not to pinch horse elbows. Enough clearance at the withers. Probably narrow to narrow/med tree.
I like the look of the SR Enduro w/ flaps (not a huge western saddle fan). Also looking into the Sommer saddles but can't find much info on them.
thoughts?
