As a child, I had a mare that was likely a Morgan.  She had a number of Morgan characteristics, but was not refined.  She had a single-foot I loved to ride.
My husband had a wonderful endurance and ride & tie horse that was 1/2 Morgan and 1/2 Percheron.  He was a consistent top ten 50-miler and placed 4th in Tevis in the late 1970s with Lud.  I rode him on one day of the 1984 XP ride.  I discovered that if his trot ramped up in speed, and he was a phenomenal trotter anyway, he would go into a rack.  Not as fast as Rowdy in the videos, but fairly fast and a gait that I could no longer post.  I just sat there and off he went.  It was a blast!
As for the videos, it was difficult to determine at that speed, but I had the impression that some of the horses were racking laterally and some diagonally.  Did anyone else see that?
