Is that for all horses or does it vary?  I feed a 10% pellet, but one boarder 
horse (appaloosa), has the strongest ammonia scented urine I've ever smelled - 
smells worse than what's in the jug you get at the store!

Yep if you feed too much protein, the digestive system rips off the 
amine radical and eliminates it through the urine. That forms the 
ammonia. I have not ammonia smell in my trailer or my barn. As far as 
shaving in the trailer, I use the "large" shavings - the local tack 
stores has two sizes. The small are like sawdust and would blow around 
in the trailer. The large don't have that problem.
