Usually nothing at all, unless I suspect a specific injury--and then I use ice in some form.  In my experience, riders seem to do more harm than good with poultices and wraps.  Cooling is the most important thing, and wrapping/poulticing just keeps the heat in (and sometimes causes more heat).  In most cases, just cessation of exercise and exposure to ambient air is sufficient for cooling.  Sometimes if it's really hot and there is a natural stream in camp, I'll go stand the horse in the stream for a bit.  But generally, nothing at all seems to work best.
