My personal preference is lots of Neatsfoot oil if I am feeling rich, Neatsfoot compound if feeling poor.Quickly there will be a post that oil will rot the stitching. That is BS. What oil will do is soften/dissolve the glue that was used to hold the leather for stitching when the saddle was made. If the stitching has already worn out, the saddle then comes apart. I was in a saddlery last month and checked the label on the leather glue and verified this. In the old days when men were men and tack was dipped into oil vats to treat it, the only glue was "hide glue" made by boiling animal parts. This stuff was water soluble (a bummer if the tack got out in the rain unoiled) but was not oil soluble so the oil did not hurt it.
