We did our own.  Foam insulating panels between the ribs, covered with pre-finished plywood screwed to the ribs.  Add pre-finished kitchen cabinets that will fit your space...a small stove and refrig from a camper supply or trailer company.  We have plywood on the floor with a loose-laid carpet over that, up the vertical wall of the gooseneck and onto the gooseneck floor.  In the gooseneck, we put another sheet of plywood with a 4" slab of foam over that.  Sleeping bags on top of foam. 
We glued carpeting in the roof of the gooseneck, as condensation dripped on our sleeping bags until we did the carpet.  My husband built a "foot locker" (I call it) which is storage plus a step up onto the gooseneck.  We don't have hot water, we don't have a bathroom or shower, we don't have built-in heat.  We do have a stove to heat water, we do have a camper's porta-potty (which resides in the horse area), we do have a rectangular "muck bucket" for a bath tub, and we do have a portable propane heater with which we are VERY careful.  We do not run it at night.  We just have warm sleeping bags and have weathered snow nicely.  We now have a small, quiet Honda generator and a small microwave to heat up, or cook, meals.  It's not posh, but it's very functional and comfortable.
