I  have a wintec isabell dressage saddle.  I really like it and it has the 
adjustable gullet and cair panels.  The problem I have is that my horse is 
right in between two gullet sizes right now.  Once she fills out a bit more, 
it should be a good fit.

I have heard that the cair panels can trap heat and actually damage a 
horse's back on extended rides.  I don't know how often that actually 
happens.
