I suspect the preference to the pace when they tire has to do with as they tire they will tend to move a little on the hollow side - which with most gaited horses means they will tend to be more pacey.

Do you find more pace as she gets tired?

My TWH mare will move from a run walk to a stepping
pace as she tires. I also notice she will break to a
canter earlier late in a ride. I always try to mix up
the gaits to use different muscle groups. We haven't
tried a 100 but have been doing 50's for the past
three seasons.
