What you DO look for, however, is conformation that lends itself to nice fattening without a lot of waste is areas that don't provide meat, such as the brisket.  One does not want a sloppy brisket on beef cattle.  You want a nice long hip.  Certain types and even breeds put on weight faster and better than others, yielding more meat per animal in the killing process.  Some people even claim that some breeds taste better than others.

Now, beef cattle ... that's a bit different.  Really hard to show a good-eating steak at halter.  :)
