Over the years, since '79, I have ridden 3 QHs, 1 half QH/Half Arab, and 2 Arabs. Nearly 5000 miles on QHs, almost 3000 on the half arab,  1000 on a borrowed purebred,  and now 1000 on another purebred.  (This last one, because of the rider's limitations, has mostly LD miles)
Just in case you are wondering, the first horses were home breds, the last one I bought not just because she was Arab, but she was the first horse I  found that I liked.  If there had been a comparable half QH I'd have gotten that one.
 
When they were each in about the same stage of  training/conditioning, there was very little difference in resting pulse or recovery times with each other, or other  horses.
 
While there are some top tens I mostly hit mid pack times.      I often get recovery ahead of horses that get to the vet check first.  I rarely pass any one on the trail, but many times in the checks.
 
What I'm trying to say is "don't discount your horse because it's not the right breed".    It has a good chance of doing just fine.  I know several Morabs that have done very well.

I know there are outliers in every breed that have low pulses, but would a 60 or 56 within 30 minutes make it harder for some of the non-Arab breeds to complete?  I have a Morab (which hasn't been competed yet) and am curious, since all I've ridden (years ago, now) have been Arabs, and slowly, and had no problems with pulses.
