Katie,

My girlfriend's horse used to do that everytime she tightened the girth too! 
She had begun to suspect her saddle did not fit. After she started riding in 
my demo saddle (a FreeForm) she  no longer does it! She is now in the 
process of purchasing one for herself.

I would look at saddle fit, and chiropractic if I were you.
