So, for example, a QH with a typical life-span of 25-30 years would be old at 20 years old; but an Arab with a typical life-span of 35-40 years would not be old until 30 years. That's assuming both are healthy and receive good care and handling. However, what's a typical life-span for any particular horse varies for each horse, depending upon their heritage. Injuries, illness, quality of care and handling, all play a part in the aging process too. So there is no guideline that can be applied specifically to age alone -- except that horses are different than people in that they are most often old only a short time before they die, rather than lingering a long time, ill before death. So IMO, the trick is to figure out the typical life-span of a particular horse and then figure one can compete up to 5 years before the end of that life-span, as long as the horse is healthy and receiving good care and handling.
