Hello Barbara, This is a home-made recipe
thats quick and very good. Its a serving to feed 8-10 people.
2 lbs. jumbo shrimp
2 Cups Fresh Chopped tomatoes
1/2 Bag Fresh Spinich
2 8 oz. jars Dried Tomato Pesto
1/4 Cup Pine Nuts
Pinch Coarse Ground Pepper
1/3 Cup Extra Virgin Olive Oil
2lbs. Spaghetti (At the NAEC i used a Gourmet Lemon
Pepper Fettichinni)
In a skillet w/ high heat, put in Olive Oil and
saute Shrimp and Pine Nuts til pink. Stir in Tomatoe Pesto, Chopped Fresh
Tomatoes and let simmer for about 15-20 minutes. Stir in Fresh Spinich and
season with Coarse Black Pepper.
Cook Pasta 'Al Denta' in boiling water w/ a pinch
of salt and a tablespoon of Olive Oil. Drain and rinse w/ cold
water. Put Pasta in large bowl and toss in sauce and serve w/ Fresh
Parmesan Cheese.
Enjoy w/ your favorite bread and salad if so
