I train on the very difficult Whiskeytown (Redding, CA) trails and we don't ride at high speeds because most of the terrain there prevents doing that. However, we usually average 6.5mph, sometimes a bit better. The average speed seems slow because of the extreme hills and ultra rocky trails. Where it is better footing, our speed goes up considerably, so we do get to practice some "fast stuff". When I attend a ride, my horse has consistantly finished in the top ten because most rides do not have terrain as difficult as where we train, and we can move at our higher rate of speed.
