The recent emergence of white hairs does strongly point in the direction of a saddle that no longer fits properly. For anyone who might experience the same symptoms, but only every once in a while, don't forget the possibility of your horse just not feeling great on any given day. As Chris said, they can be very stoic but even a horse can have a headache or digestive upset.
