I use the kind that are cordura on the inside and the outside. Just spray some decent waterproofing on them and you're good to go! If you've got kinda big calves (you know, cuz of all the posting muscles*grin*) just add some velcro to the straps. In the winter I have used rubber steel-toed boots which are too big with thick wool socks and that has worked great ... if I break through ice and step into water I stay totally dry and they are easy to clean and relatively cheap.
