There is no reason that a two horse trailer needs anything more than load range B (old 4 ply rating).   Even with two horses the load per tire will be less than a 1970 Cadddy and they did fine with them.  Even with a 2 horse LQ, load range C (old 6 ply rating) like half ton pickups use would be fine.
 
If in doubt, weight the trailer, add the weight of two horses , and divide by 4.  This will get you the load per tire.  Compare this with the weight on the side of the tire.  Then inflate the tire to the proper pressure.
