For the rest of us the difference is that it is extremely pure Sodium Chloride. It does not have the trace amounts of anti-caking chemicals that are in other salt (Morton Salt company: "When it rains, it pours" was the first to use them). To prevent caking, the granual size of Kosher Salt is larger than usual table salt. Because I grew up in NJ where Kosher salt was available, but canning salt was harder to find, I normally use Kosher salt for canning. The anticaking agents in table salt, will make the liquid in the canned stuff slightly cloudy. Doesn't hurt anything, but is unsightly.
