In addition, oat grains are a nice little packet of nutrients as long as the outer layer isn't disrupted by being processed. Once they are, then whatever nutrients they contain that are susceptible to air start to oxidize. Over time, a significant portion of the nutrient potential is lost---the minerals will still be intact, as well as starch and protein for the most part. Fat soluble vitamins oxidize out pretty quickly. Those don't comprise a tremendous component of oats, but it's about 3-4%, so might as well try to preserve whatever nutrients you've already paid for. My vote is always whole 'heavy' oats---cleaned (ie, dehulled), but not otherwise processed. Good stuff. JMO.
