First of all, most critters don't take kindly to being sliced open - the knife/scalpel/whatever cut really hurts and continues to really hurt until consciousness is lost. Plus you may not get the vein or artery you're aiming for right away, and since I've read many horses panic when cut and bleeding like that - they thrash around. How're you going to continue this cutting if the horse is fighting you? Plus many people end up cutting the trachea as well, and so the horse is wheezing and aspirating blood and coughing while it's dying. or, if they don't cut the trachea, they slice through neck muscles... If that isn't bad enough, it takes a long time (relatively) for a horse to die by bleeding out, and there's blood everywhere. This constitutes a lot more suffering than a quick bullet, and in my opinion the process is much, much harder (on both the horse and the human).
