Two of my horses got a chance to do this a couple of years ago. It was really funny the differences in their reactions. One horse is highly reactive and when he gets on overload, he just shuts down. Dangerous, I think, but vets love him because he stands perfectly still for the most godawful procedures. Anyway, with the cattle following, the goal was to have the horse just relax and drift if he stayed "on the cow", but if he lost focus, he had to work (trot circles). One horse caught on right away and because pretty "cowy"; the other went into overload and it was like he was asleep.
