One of my best years points-wise was with Ozar in 2000 - she's 14h even, and I'm a 5'11" heavyweight. She is short but stout and didn't have a problem carrying me. I'm a LOT lighter than the person you saw - I'm not sure someone who is 275# ought to be on most horses at all. I also noticed that at the PanAm, just about all of those top-notch 100 mile horses were somewhat small. I have seen people get in trouble in endurance with large horses, too - they don't cool down well.
