How best would one allow horses to graze overnight on the trail?

Oh my, this is funny.  Yes, I saw a mare once take off at a real funny
gallop with her front legs hobbled.  I wouldn't trust it either.

during lunch at the Lake Ilsanjo at Annadel.  After a short time of 
grazing the horses decided it was time to go - and off they went 
galloping fast with their two front legs hobbled - into the distance 
on the wasy back to the parking lot.  The old cowboys ran after them 
with their bridles in their hands.

I wouldn't leave horses hobbled overnight out camping - if I wanted 
to see them in the morning. No telling when they might decide to 
wander off.
