I know there is some convention about pounds of weight and increased work or decreased stride length at a gallop that I have heard (though I can't remember the specifics of this rule of thumb!) & I this is the basis for a favorite carrying as much as 130 some odd pounds, while another horse may carry as little as 109. It seems logical in flat track racing to weigh the sum total of what the horse carries, including saddle and jockey, particularly with $ on the line for all involved. Jon K.
