On rides where this might be the case I or in places the water is unsafe for a horse to go in (muck bottom) I carry a collapsible bucket. That way I can get him water from places he couldn't. I've also been known to carry a pound of feed with me so he could have a snack. I've actually gotten him water out of a spring in a zip loc bag I carried the feed in. It took a lot of zip loc bags full but he was ever so grateful.
