First, find out what health problems are prevalent in the breed you're interested in, then make sure that the breeder has screened the parents for those health problems, or if breeding to a dog owned by someone else, that the breeder has documentation that *that* dog has been screened. Hip dysplasia, eye problems, heart conditions, thryroid, etc. are just a few of the genetic health problems that a responsible breeder should screen for (depending on breed).
