Sounds like a perfect opportunity for clicker-training! 
Alexandra Kurland has a book, website, videos etc on the
subject.  It is fun and VERY time-consuming, and can be used in
conjunction with any other training method.  I've done some with
my dogs, and a bit with Idiot Boy when I first got him, to teach
him to stand for mounting.  Now that he is suffering from Spring
Grass Psychosis, I may try it to see if I can keep him playing
Whirling Dervish when I try to pony Lexi from while riding him.
