Unfortunately the web sites all give the bad news that the 
Appalachian Trail, by federal and state law, is closed to horses:

It's a lovely trail and I hiked a lot of the New Hampshire section 
when I was in grad school (and a whole bunch of the other White 
Mountain trails).
