The Standardbred Pleasure Horse Organization (SPHO) has a motto: "Standardbreds, they're not just for racing anymore." There are stories of former racehorses and what they do now. There is a book called Retraining the Harness Racehorse and another one on Carriage driving. Interesting information (Yes, I have a STB, though she is now a pasture pet).
