If I saw a rider (experienced or not) with a "wild and crazy horse" I would not want to put my horse or myself in jeopardy and would try to stay clear. Having your horse around one that is cranked up can certainly crank up your own. Very often, that is the way it works, not the other way around. It all depends on just how "out of control" the other horse is and if you perceive it to be a dangerous situation for you/your horse. BTW, I, personally, take offense at you calling Cindy's horse a "plow horse." She is a horse that I would love to own. Cindy has taken the time to train her to not get cranked up but to go willingly and eagerly down the trail. And, FYI, Cindy has done so much to encourage new people to the sport and be educational, informative, and encouraging. She has personally stayed with me when my mares have been total idiots. She has "mentored" more than her fair share of people. She is more than "qualified," unlike some others that come to mind.
