Since most everyone's rolls up and ties to the saddle, does that mean that
they aren't fitted (darted or whatever) like a lot of blankets are?

What about straps under the tail?

I made several from polar fleece.  Yes, I did dart them.  The "pattern" I
used was to spread out a winter blanket and trace the pattern of the shape
of the butt. Sort of a no brainer!  Sew double good quality shoe laced at
the point near your cantle rings; one set ties to saddle, the other set ties
the cover in a roll....
