ANY fat source is prone to oxidation/rancidity, and the further away from the orignial packaging you are (ie, a whole sunflower seed), the more likely you are to need additional antioxidants, such as vitamin E. The only time you don't need to add antioxidants is if you're feeding the oil in "the original package" before it's ever had a chance to oxidize. And even then, the additional vitamin E doesn't hurt and can go towards other uses in the body---such as the oxidizing effects of sustained exercise.
