Since we don't wear swords these days there is no reason to mount from one side or the other. I wonder how lefthanders who carried a sword go on a horse:-). I don't know if it's swords or not that started the arcane practice of "only mounting from one side" but whatever it is it doesn't apply any longer. For a long stretch my left knee was giving me problems and I had a tall horse so by golly I always mounted from the horses right side - or is that the wrong side - during that time if I couldn't find anything tall to stand on. I'd usually dismount on the opposite side I mount on (if I can remember which side I mounted on ) just to keep the stirrup leathers from getting out of whack so quickly. Sometimes when I found a tall stump I mount on the left just to keep her confused :-). My current horse doesn't know he has two different sides (a right one and a wrong one) and he is about two inches shorter so not so hard on the knee. I use whichever side it makes sense to use. I'm not looking forward to the day when this will "come in handy." That probably means I'll be banged up and can only mount using one of my legs (or arms). But if that day comes it will just be another hop up to the saddle as far as my horses are concerned.
